Easy Taco Tuesday and Cinco de Mayo dinner ideas are the BEST! My family loves these simple bean burritos. They are just like Taco Bell Bean Burritos but BETTER. There’s no need to purchase store-bought frozen burritos when you can make your own at home for a fraction of the cost.

The price of EVERYTHING has been on the rise. Frozen Bean Burritos have now been put on my “outside of grocery budget” list. Who would have ever thought that such an easy inexpensive item would cost so much now.
Taco Bell costs are getting crazy too! So, making restaurant favorites and freezer friendly recipes at home has become my thing lately. Last week I made a few batches of these CopyCat Taco Bell Bean Burritos. They are great for a quick weeknight meal.

Bean Burrito Ingredients

Bean Burritos are great, if anything, for the fact that all of the ingredients are super simple. If you’ve had any Taco Tuesdays or taco nights recently, you’ll probably have a lot of these staple ingredients on hand! In case you need to run to the store, here’s all the ingredients you’ll need:

Bean Burrito Ingredients
  • Refried Beans – If you wanted to save some time and ingredients, you could use just refried beans for your bean burrito filling. We think it tastes much better if you mix it with…
  • Seasonings – Just a touch of garlic powder and some chili powder should do the trick. You could also try using some Homemade Taco Seasoning if you’d like!
  • Milk – Just a splash to give us a bit of a looser refried bean burrito filling.
  • Tortillas
  • Sauce – You’ll want to add some sort of sauce to your Bean Burritos before baking them. We used our homemade Taco Bell Red Sauce for this recipe but you could just use some enchilada sauce.
  • Onion– Finely dice the onion if you want to make your burritos like Taco Bell. You can omit these if you have picky eaters.
  • Cheese – We used cheddar cheese but you could use any of your favorites. Maybe a bit of pepper jack or Monterey jack cheese instead for a bit of extra spice?

How to make Bean Burritos

Beans and spices added to saucepan.

Making these Bean and Cheese Burritos like Taco Bell does isn’t hard at all! Once you’ve whipped up a bean filling and rolled the burritos up, the oven will do most of the work. To make these Homemade Burritos yourself, here’s all you gotta do:

  • Start prepping for the recipe by finely dicing your onion and shredding your cheese. Set aside and prepare your bean burrito filling by combining refried beans, garlic and chili powders, and milk in a medium saucepan. Stir to combine and cook over medium-low heat for about 5 minutes or until warm and creamy.

  • Divide your bean mixture evenly between each of your tortillas. Place in an oval-shaped mound in the middle of each burrito.
Red sauce added to the top of beans.
  • Evenly top each burrito with a helping of red sauce.
Onions added ontop of beans and red sauce.
  • Top each burrito with an equal amount of diced onions.
Shredded cheese added to bean burrito.
  • Divide your shredded cheese up and equally top each burrito.

  • Start folding the burritos up. First, fold one end of the tortilla over until it covers your burrito filling.

  • Fold the open ends of your tortilla in before tightly rolling the rest of the burrito up. Transfer the burritos to a baking sheet and set them on their folded side down to keep them closed. Bake at 375 degrees for 12 minutes.

Storage / Freezing

Storage: If you have any leftover Bean Burritos, let them cool completely before storing them. Consider wrapping in a paper towel and/or aluminum foil before putting in an airtight container. Keep in the fridge for 3-5 days.

Freezing: You can also try freezing Bean Burritos. Let cool and wrap like you would for fridge storage but instead transfer to a freezer bag or freezer-safe container. Keep frozen for 3-6 months and reheat in the microwave, oven, or air fryer.

Recipe Tip

Be sure to place your burritos with the folded side down on the baking sheet.
